Pasta with blue cheese and pumpkin

INGREDIENTS (2 people)

·1/2 pumpkin, cut into large pieces

·1 tbs. butter

·1 onion, cut in slices

·3 tbs. blue cheese (I used the brand "cheesegeek")

.200 g pasta (I used the brand "Latuapasta")

·1 tsp. chili flakes

·Black pepper

·Olive oil

  1. Preheat the oven to 220 ºC. While the oven is heating up, cut the pumpkin into large pieces.

  2. Add a little olive oil, salt and pepper to the pumpkin and put it in the oven for about 40 minutes.

  3. While the pumpkin is cooking, fry the onion with the butter in a frying pan and set aside.

  4. When the pumpkin is cooked, cut it into pieces and mash it with the help of a fork.

  5. Then, in a frying pan mix the blue cheese, the squash, the onion (reserve a little onion for the final dish), add chili flakes and a little water.

  6. Cook the pasta for the time indicated on the package and finally, when it is cooked, mix it with the sauce we had previously prepared.
